Honey-Teriyaki Kabobs

If you are looking for the perfect summer recipe to share with friends, you have to try this one we experimented with last night. Probably some of the best kabobs I've ever had and pretty simple to make.

Ingredients

1/2 cup teriyaki sauce
1/2 cup honey
1/2 teaspoon garlic powder
1/2 pinch ground ginger
2 red bell peppers
2 green bell peppers
1 cup of grape tomatoes
1 pound beef sirloin, cut into one into cubes
1 1/2 pound chicken breast, cut into cubes - we added shrimp for variety
1/2 a can of pineapple chunks
skewers

Directions

1. In a large bowl, mix the teriyaki sauce, honey, garlic powder, and ginger. Place red and green bell peppers, tomatoes, beef, pineapple, chicken, and shrimp in with the marinade and stir so everything is coated. Refrigerate for 4-24 hours.

2. Preheat grill for medium-high heat
3. Discard marinade and thread the meat and vegetables onto skewers, leaving a small space in between each item.
4. Grill skewers for 10 minutes- turning as needed or until meat and vegetables are cooked through.

Pad Thai

From Erin at C'est La Vie. Thanks again, Erin!!

** Can also take out any meat and/or shellfish for a vegetarian meal.

8 oz rice noodles
2 Tbsp peanut or vegetable oil
4 scallions, coarsely chopped
2 garlic cloves, crushed
2 fresh red chilies, seeded and sliced
8 oz pork**
4 oz cooked, shelled, large shrimp**
juice of 1 lime
2 Tbsp thai fish sauce
2 eggs, beaten
1/3 cup fresh bean sprouts
handful of fresh cilantro, chopped
1/3 cup unsalted peanuts, chopped

Cook noodles in large pan for 10 minutes or until just tender. Drain, rinse under cold water and set aside.

Heat oil in preheated wok, add scallions, garlic, chilies and stir-fry over med-high heat for 1-2 minutes.

Add pork and stir-fry over high heat for 1-2 minutes.

Add the shrimp, lime juice, thai fish sauce and eggs, stir fry over medium heat for 2-3 minutes or until the eggs have set and the shrimp are heated through.

Add the bean sprouts, most of the cilantro, peanuts and noodles. Stir fry for 30 secs or until heated through and well-mixed.

Eat and enjoy!

**can substitute chicken for pork and/or shrimp; easiest to pre-cook chicken and toss it in at the same stage as you would pork.

Spinach Ravioli Bake

I made this new recipe from Taste Of Home tonight.

It's very easy and quite yummy. It's almost like a Ravioli-Lasagna.

2 Cups Spaghetti Sauce
1 Package (25 ounces) Frozen Italian Sausage Ravioli
OR Ravioli of your choice (Cheese for Vegetarians)
2 Cups Shredded Mozzarella Cheese
1 Package (10 ounces) Frozen Chopped Spinach, Thawed and Squeezed Dry
1/4 Cup Parmesan Cheese

Grease a 2-qt. baking dish.
Place 1 Cup spaghetti sauce in greased dish. Top with half of the frozen ravioli (ravioli does not need to be cooked, it can be frozen), mozzarella cheese, spinach and Parmesan cheese.
Repeat Layers.
Bake, uncovered at 350 degrees for 40-45 minutes or until heated through and cheese is melted.

Here is the dish before it went into the oven:

And here it is all finished and ready to eat. Almost looks too good to eat, doesn't it? :)
