2 cups flour
3 tsp baking powder
3/4 tsp salt
2 1/2 tbsp sugar
1 egg, lightly beaten
1 cup milk
Sift flour, baking powder, salt, and sugar together; set aside.
Combine egg, milk, and cooled margarine. Pour the liquid mix into the flour mixture; stir only a few times.
The batter should be lumpy - do NOT beat! (If the batter is beaten smooth, the muffins will be tough will be dull crusts and an uneven texture.)
Fill greased muffin tins 3/4 full and bake at 400-degrees for 20-25 minutes.
